What defines a disk or torus?

I picked out the x-axis data (density and velocity in y-direction, which is a measurable data in Doppler shift) then I averaged over time.

The secondary locates at 2.67 AU away from origin and the primary locates at 1.33 AU away from origin. So the density spike within 2.7 AU is natural. The velocity in y direction is very spiky. I do not know why.

I do not think this is a disk or torus, people can be more clear when I compare this data to the dense shell ejection model.
